Pizza Night—A Veggie Pizza in 15 Minutes

I love pizza and so does most of my family. We don’t live in a city that’s full of mom and pop pizza restaurants, so we’re stuck with the big chains. Unfortunately, eating out at those restaurants is costly and it’s really unhealthy. I try to keep everyone healthy and family. When everyone is in the mood for pizza, I make my easy 15-minute veggie pizza.

This easy-to-make pizza will be a surefire hit with your family, and your kids will be getting their share of nutritious vegetables too. Get everyone in the family involved–even the little ones and your spouse.

Customize the recipe to your tastes. Use your favorite cheeses, and let your kids pick out the veggies. Let the older kids help with the chopping. Make sure that all the vegetables are sliced thin.

When it comes to sprinkling on the vegetables and cheese, let your kids take turns scattering on their favorite veggie. For more fun, give each child his/her own section of the pizza.

To save time, I use a pre-bought pizza crust for this recipe. You can always make your own. It’s much healthier, but it does take more time.

15-Minute Vegetarian Pizza

Ingredients:

Store-bought pizza crust
6 Roma tomatoes (or can of diced tomatoes)
A clove of garlic
1 teaspoon of olive oil
Pinch of sea salt
Sliced mushrooms
Onion rings, sliced to taste
Broccoli, chopped thin
Carrots, thinly shredded
Package of shredded cheese, any type

Directions:

Preheat the oven to 350 degrees.

Next, make the tomato sauce. First, roughly chop up the Roma tomatoes. Discard the seeds. In a food processor or blender, add the diced tomato (or can of tomato), the garlic, olive oil, and sea salt. Blend until it’s a sauce-like mixture. Set aside.(Let one of the younger kids push the buttons on the food processor. They’ll love it!)

Prepare the vegetables. Slice and chop your vegetables to their desired size. The thinner they are, the faster the pizza will cook. Your older children can help with the chopping.

Spread your freshly made tomato mixture over the pizza crust. Lightly sprinkle with a layer of cheese. Place the vegetables on top. Add more shredded cheese on top. You can use two types of cheese, if you want.

Bake the pizza for 10-15 minutes. The crust will be light brown and the vegetables done. Remove from the oven. Let your kids slice and serve the pizza.
