Homemade Ice Cream Sandwiches

Treat yourself and your family to some sweet ice cream sandwiches. Make them with your kids for an afternoon snack or after-dinner treat.

There are a million combinations of cookies and flavors of ice cream that you can use. Because I tend to be the type of cook that enjoys quick and easy recipes that don’t take a lot of time, this recipe calls for store-bought cookies. You can also use brownies.

Feel free to bake your own cookies or brownies. Your kids will love stirring the batter and licking the spoons before they go into the dishwasher.

If you bake brownies, make sure that they are cooled before you use them. You can even chill them for 15 minutes in the freezer. Cut them in half and spread the ice cream in between.

If you bake your own cookies, make them extra fun by using cookie cutters. Use unique shapes like hearts or stars. Let your kids pick the shapes they want to use. Make sure to label each child’s sandwich, so that there’s no fighting later.

You can choose any type of store-bought cookie for this recipe. Pick the ones that your kids enjoy the most. Avoid any cookies with cream in the middle (such as Oreos). You could use oatmeal cookies, chocolate cookies, vanilla wafers, graham crackers, and even pound cake.

I’m going to use mint chocolate chip ice cream for my ice cream sandwiches, but let your kids pick out the flavors they want to use. Have fun and enjoy!

Mint Chocolate Chip Ice Cream Sandwiches

Ingredients
Store-bought chocolate chip cookies
Tub of Mint chocolate chip ice cream

Directions
You’ll need softened ice cream for this recipe. You don’t want ice cream that’s melting and dripping everywhere, but you don’t want ice cream that is so hard that it’s hard to spread on the cookie.

Ways to get softened ice cream:  microwave the tub of ice cream at 10-second intervals until the consistency is soft enough; leave the ice cream out on the counter at room temperature for 15 minutes; or leave it to soften in your refrigerator for 30 minutes.

When the ice cream is soft enough to use, begin to assemble the ice cream sandwiches. Using a spoon, let your kids take a spoonful of ice cream and spread it on the top of one of the cookies. Place the second cookie on top of the ice cream. (Make sure that it’s placed bottom side down—the smooth bottom part of the cookie should touch the ice cream).

Serve immediately and let your kids dig in. You can also wrap the cookies in plastic wrap and freeze for later.
