Afternoon Snack: Mini Mushroom and Tomato Pizza
For an afternoon snack, let your kids have fun making mini pizzas. You can cook them in your toaster oven, and they only take about ten minutes.
This is a recipe that your kids can do by themselves. All you’ll need to do is supervise them as they chop the ingredients. Use any vegetables that you want. Pile it on and enjoy!
I’ve used my favorite two ingredients: mushrooms and tomatoes. The recipe yields two mini pizzas.
Mini Mushroom and Tomato Pizza

Ingredients
1 loaf of French bread, sliced in half lengthwise
1 clove of garlic
1 tablespoon of olive oil
1 large tomato, chopped
1/2 cup of mushrooms, sliced
1/2 teaspoon of dried oregano or Italian seasoning
1 cup of shredded cheese (any variety)
Directions
Rub the clove of garlic on each bread half. Lightly brush the bread with olive oil. Toast the two halves of the French bread in your toaster oven for 1-2 minutes or until it is lightly toasted.
In a small bowl, combine the chopped tomatoes, sliced mushrooms, dried oregano, and half of the cheese.
Take the bread out of the oven and top it with the mixture. Evenly coat each bread half. Sprinkle the other half of cheese on top.
Toast the mini pizzas in the toaster oven until all the cheese is melted. Serve and enjoy.
