A Healthy Side Dish: Sautéed Spinach with Garlic and Mushrooms
I don’t know how many of you have your own vegetable garden, but our family loves the spinach and lettuce that grow in our garden in the spring and fall. These greens are so healthy and have such a satisfying taste.
You can use either canned, frozen, or fresh spinach for this recipe. In my opinion, it’s a delicious side dish and is so easy to swallow. You don’t even have to chew. Let your kids help you, and they might even want to taste the spinach for themselves!

Sautéed Spinach with Garlic and Mushrooms
Ingredients
2 tablespoon olive oil
4 cloves garlic, sliced thin
1/2 lb white mushrooms, sliced
1 lb fresh spinach leaves
2 teaspoon low sodium soy sauce
Directions
Slice the garlic and mushrooms. Set aside.
In a skillet, heat the olive oil. Add the garlic slices and cook until fragrant. Add the fresh spinach leaves and mushroom. Sauté until spinach and mushrooms are tender.
Mix in the soy sauce. Cook for one more minute.
Take off heat and serve!
