The Easiest Recipe in the World Made Harder—Golden Mushroom Chicken

My significant other loves golden mushroom chicken. His mom made it for him when he was young, and it’s still one of his favorite dishes. The original recipe is so simple to make and only has three ingredients: golden mushroom soup, water, and chicken. Sadly he’s stuck with a creative chef, and this means I get to tinker and enhance recipes to my liking.

I love garlic, so I’ve added garlic cloves and powder to this recipe. Instead of water, I substituted chicken broth, which helps enhance the flavor even more. I added real mushrooms to the recipe because it makes the presentation look better and they are tasty too! I had baby portabella mushrooms on hand, but you can use any type of mushrooms.

Golden Mushroom Chicken with Garlic and Extra Mushrooms

Ingredients

1 lb chicken breast
2 tablespoon garlic powder
2 tablespoon black pepper
2 tablespoons olive oil
4 cloves garlic, sliced thin
½ cup baby portabella mushrooms, sliced thin
1 can golden mushroom soup
½ soup can chicken broth
Directions

Split the chicken breasts in half, lengthwise, so that they are nice and thin. Sprinkle garlic powder and black pepper on each side of the breast.

In a skillet, heat the olive oil. Add the garlic slices and let it sizzle. Cook chicken breasts in pan until mostly done.

Add the can of golden mushroom soup and chicken broth to the skillet.  Stir until gravy is mixed thoroughly. Add the baby portabella mushrooms  to the skillet.

Simmer for 10 minutes until chicken is completely cooked. Spoon gravy on chicken while it cooks, so it absorbs more flavor.

Serve with mashed potatoes and a green vegetable. Enjoy!
