Bison Meatloaf
Sometimes, you just want some good, ole-fashioned comfort food. I think meatloaf warms you up, and it’s just plain yummy! Glaze the top with some ketchup, and you’ve got yourself a wonderful main dish. Serve it with mashed potatoes and green peas, and you’ve got a wholesome and healthy meal.
Meatloaf is such a filling and versatile dish. You could probably use any type of chopped veggies that you want, and it would still come out delicious. I used onions and bell peppers because I love those flavors. You can also use minced garlic or finely chopped mushrooms.
I’m using ground bison because it’s my favorite meat, but you could use ground beef, pork, or chicken.

Bison Meatloaf
Ingredients
1 medium Vidalia onion, chopped coarsely
2 bell peppers, chopped into small pieces
1 egg, lightly beaten
1lb ground bison
packet of meatloaf seasoning
1/2 cup milk
1/4 cup Italian bread crumbs
1/2 cup ketchup
Directions
Preheat the oven to 350 degrees.
Chop the onions and bell peppers into small pieces. Next, lightly beat the egg.
In a large mixing bowl, mix together the ground bison, meatloaf seasoning, milk, Italian bread crumbs, and ketchup. Add the vegetables and mix until everything is well-blended.
Shape the meatloaf and place in a casserole dish. Cover loosely with foil and bake in the oven for one hour.
Let the meatloaf stand for 5 minutes to cool. Top with ketchup or desired gravy. Serve and enjoy!
