A Mushroom Side Dish

I hope everyone had a fun election day Tuesday. It was hectic in our family—we stayed glued to the TV to watch the results and the numbers come in. And finally the election is over; the new president has been voted on, and we can all go on with our lives!

Back in the kitchen, I’ve been tinkering with a marinated mushroom recipe. A family friend in Birmingham made it when we came over to her house for dinner once, and it was so good that I wanted to try it myself.

My marinated mushroom recipe calls for lots of garlic because garlic is one of my favorite ingredients ever. If you don’t like garlic, feel free to use less. As with most of the recipes on this blog, feel free to change the amount of spices, according to your tastes.

This is a great side dish to make with dinner, and hopefully will make your kids enjoy mushrooms.

Mushrooms are always so much fun to slice up because of their strange shape, but they are so good to eat! And not to mention great for you!

Easy and Simple Marinated Mushrooms

Ingredients
1/3 cup olive oil, divided
4 cloves garlic, thinly sliced
1/2 cup red wine vinegar
1/4 teaspoon ground dry mustard
1 tablespoon dried parsley
2 tablespoons brown sugar
1 medium onion, sliced into rings
Dash sea salt
Dash ground pepper
1 pound button mushrooms, sliced in half

Directions
In a saucepan, heat one tablespoon of olive oil and the slices of garlic. Cook until garlic is fragrant. Add the remaining ingredients (except the mushrooms) to the pan. Stir together and bring mixture to a boil.

Turn the heat down to medium and stir in the sliced mushrooms. Cook for 5-7 minutes until the mushrooms are tender and juicy.

Serve as a side dish to any meal.
